Sinigang Air Fryer Wings
As a Filipina, I’ve slowly introduced Filipino foods to my Chinese/Japanese fiancé over the years. Along the way, he’s discovered one of his favorites to be sinigang soup. He LOVES sour soups so I always try to make it as sour as possible whenever I make it for him.
When I came back from a two week trip to deal with a family emergency, I found out I had been laid off. Defeated, broken-hearted, and frustrated, all I wanted to do when I got home was be with my fiancé, cook, and eat comfort foods. I came back with many questions about life, my purpose, and the future, but I knew in that very moment that all I wanted to do was turn my brain off and cook.
I was craving chicken wings and my fiancé had mentioned in passing that we hadn’t had sinigang soup in a while. With the Bay Area winter weather finally exiting out of that weird on and off heat wave phase, I figured why not try to combine the two cravings into one!
My future in-laws grabbed some wings for me in bulk from Costco and I grabbed a packet of sinigang soup mix from my local Asian market. The rest of the ingredients my future in-laws had in their pantry so luckily I didn’t have to do too much shopping.
Initially, when I was in test kitchen mode developing this recipe, I just patted the wings dry the same day I prepped them before popping them in the air fryer. Since then, I’ve made a spatchcocked Thanksgiving turkey which I chilled in the fridge overnight to help create a crispy skin. So if I were to do these wings again and if I had the time, I’d do the same and chill them in the fridge overnight to help develop a more dry exterior!
These crispy sinigang-flavored wings are perfect for game day!
Recipe
Ingredients
3.5 lbs, chicken wings
Non-stick cooking spray
1 green onion, chopped
Handful of cherry tomatoes, sliced in half
For seasoning:
2 tbsp, Mama Sita’s Sinigang mix
1 tsp, salt
1 tsp, pepper
½ tbsp, granulated garlic
Neutral oil
For dredging:
½ cup, all-purpose flour
½ tsp, salt
½ tsp, pepper
½ tbsp, corn starch
1 tsp, baking powder
½ tbsp, sinigang powder mix
Directions
Pat dry chicken wings. If you can, leave it uncovered in the fridge overnight to chill and dry out
Season with sinigang mix, salt, pepper, and granulated garlic. Mix together seasonings in a bowl and then coat the wings lightly in a neutral oil so the dredge can stick on.
Toss wings in flour, salt, pepper, corn starch, baking powder, and sinigang mix. Shake off excess.
Place wings in your air fryer, skin side up, making sure to not overcrowd the basket. Spray basket and top side of wings with neutral cooking spray. Air fry at 350°F for 12 mins
Flip wings and spray with neutral cooking spray . Air fry at 400°F for 3 mins.
Flip again and add a handful of cherry tomatoes, halved. Air fry at 400°F for 2 mins or until wings reach an internal temperature of 165°F.
Let cool for 1-2 minutes. Top with green onions and serve with cherry tomatoes on the side. Enjoy!
